Scalloped Corn is one of my family’s favorite holiday recipes, and somehow I’m expected to make it every year. My husband loves it so I have to make it for his family, too. Fortunately, it’s really easy. When it comes to cooking, I’m all about easy. I have the recipe memorized, so let’s see if I can write it down.
Ingredients:
1 can creamed corn
1/2 can milk (use the can above)
1 beaten egg
1 package saltine crackers, crushed
Salt and pepper to taste (I rarely use salt.)
Melted butter
Mix the corn and milk, warm in microwave for 1-2 minutes. Add egg, add 3/4 pkg. crackers. Pour in casserole dish. Coat remaining crackers with butter and sprinkle on top. Bake at 400 for 30-40 minutes.
I live above 6000 feet now, so I use less milk and bake at least 40 minutes. Scalloped corn is great with ham or rib roast. Enjoy!

Another version of the recipe adds pimento. I’ve never tried that, but I love the splash of color.

Everyone loves a good family tradition. For me it was always Chex Mix (home made) and Macaroni Salad (The mayo kind).
Mmm love Chex Mix. Gotta learn to make that.
The secret ingredient is worchester sauce.
